Ingredients:Turmeric Powder – ¼ Teaspoon
Chilly Powder – ¼ Teaspoon
Carrot  – 1
Chena (Yam) – ¼ piece of a medium yam
Khaya (Raw Banana) – 2 small
Vellarikya (Cucumber) – ¼ of a Medium Sized
Drumstick – 3 – 4
Payyar(Long String Beans) – 4-5
Beans – 4-5
Kovakkya (Ivy Gourd) – 3 -4
Grated Coconut – ½ Cup
Green Chilies – 3-4
Curd – ¼ cup
Jeera – ¼ Teaspoon
Oil (Preferably Coconut)
Curry Leaves – 7-8
Salt to Taste

Method: 

  1. Wash and cut all the vegetables into finger long pieces.
  2. Put them (except Green chilies) into a saucepan and add in turmeric powder , Chilly Powder and salt.
  3. Add just enough water. Water should not cover the vegetables.
  4. Bring to a boil.
  5. Cover and cook till the vegetables are done.
  6. Grind grated coconut, Jeera, curd and green chillies into a rough paste.
  7. Once the vegetables are cooked ,  add in the ground paste and mix well.
  8. Add Curry leaves and pour oil onto the vegetables.
  9. Avial is ready to be served with Steamed Rice. It tastes good even with Chapathi.
Tips: 

Avial is a dish that you can make with any vegetables that are available at home. You can make it with just carrots , potatoes and drumsticks. The procedure is just the same.
